First Recipe = Leek Soup!

Bring 4 cups chicken or veggie stock to a boil
Add 6 cups leek tops, which were cut into 1 inch strips
Bring back to boil and add 2 tablespoons butter
Turn down to medium heat and let simmer for 45 minutes, covering the pot
Add a cup and a half of heavy cream
Let simmer for 15 more minutes.  

For different flavor combinations, try roasting the leek roots, cutting into small chunks, and adding to the soup.  Heavily smoked chicken is a great addition as are boiled potatoes or sauteed mushrooms.
